Aqua Pazza Brings Authentic Italian Dining to Colombo

    Colombo’s dining scene has no shortage of Italian-inspired restaurants, but Aqua Pazza arrives with a very specific idea: to bring the experience of authentic Italian dining to the city without altering it to suit local expectations.

    Located at 48 Park Street, Colombo 02, Aqua Pazza is the latest addition to the Aqua family, a restaurant group that began in Galle with Aqua Forte, its Italian fine-dining restaurant at Galle Fort. The new Colombo restaurant carries the same commitment to Italian food and hospitality, while introducing a slightly more contemporary and relaxed setting for diners.

    The restaurant was created by founders Roberto Vicario and Paolo Gavioli, alongside their third partner, with the intention of bringing the same quality and philosophy that established the Aqua name in the south to Colombo.

    For the founders, authenticity is at the heart of Aqua Pazza. Rather than adapting Italian dishes heavily to suit the Sri Lankan palate, the restaurant aims to serve food that diners would actually encounter in Italy.

    Speaking to us, Roberto explained that the concept was never about suggesting that Colombo had no Italian restaurants. Instead, Aqua Pazza wanted to offer what he describes as an authentic Italian experience, one that does not compromise on traditional recipes, flavours or ingredients.

    The philosophy is straightforward: what is served at Aqua Pazza should be something that could be found on a table in Italy. From the recipes and preparation methods to the ingredients and presentation, the restaurant seeks to respect Italian culinary culture rather than reinterpret it beyond recognition.

    That does not mean Sri Lanka is absent from the experience. In fact, the island plays an important role in sourcing. Seafood is one of the restaurant’s key ingredients, and the founders see Sri Lanka’s abundance of fresh seafood as a natural fit for Italian cuisine. Italy itself is surrounded by the sea and has a long tradition of seafood dishes, making the local produce particularly suitable for the restaurant’s menu.

    Vegetables and other ingredients that are available locally are also incorporated, while products that cannot be sourced to the required standard are imported from Italy. It is this balance between local availability and Italian authenticity that allows Aqua Pazza to maintain its culinary identity.

    The connection to Sri Lanka began almost seven years ago, when the founders opened Aqua Forte at Galle Fort. What started with the discovery of a beautiful space and an idea for an Italian restaurant gradually developed into the Aqua family. The success and positive response to Aqua Forte led to further expansion in Galle, including a pizzeria and café, before the founders decided it was time to bring their concept to Colombo.

    According to Paolo, many customers who visited their restaurants in the south would ask why the same quality and experience was not available in Colombo. That feedback eventually became part of the motivation behind Aqua Pazza.

    While the food remains firmly Italian, the restaurant also carries a subtle Spanish influence through one of its founders. This is reflected in the tapas-style small plates, adding another layer to the dining experience without taking away from its Italian foundation.

    The space itself was designed around the same philosophy. Paolo describes Aqua Pazza as sophisticated without being overly formal. The aim is to create the kind of atmosphere diners might experience in cities such as Milan or Rome, where fine dining does not necessarily mean an intimidating or rigid environment.

    Instead, guests can come with friends or family, relax and enjoy the food in a polished setting. Attention to detail is a major part of the experience, from the glassware and crockery to the table settings and service. For the founders, Italian style is not simply about how the food looks; it is also about everything surrounding the meal.

    The menu reflects this approach. Among the dishes featured are Pesce alla Cannella, cured marlin citronette with Dilmah cinnamon powder and microgreens; Funghi Gratinati, button mushrooms grated with Parmigiano Reggiano and garlic; and Prosciutto di Parma e Papaya, combining Parma ham with cured papaya.

    The pasta selection includes Spaghetti all’Aragosta, bronze-drawn spaghetti with lobster meat, lobster stock and lemon zest; Chitarrine al Cacao con Agnello, homemade cocoa-squared spaghetti with white lamb ragout; and Ravioli di Magro, homemade ravioli filled with ricotta cheese and spinach and served with sage butter sauce.

    For the main course, the menu features Pesce all’Acquapazza, with barramundi fillet poached with wine, cherry tomatoes, Taggiasca olives and capers; Pollo alla Cacciatora, a sous-vide chicken escalope with rich tomato sauce, celery, carrots, onions, olives and potatoes; and Parmigiana, featuring fried eggplant with tomato sauce, Parmigiano Reggiano and white scamorza.

    No Italian dining experience would be complete without dessert, and Aqua Pazza finishes with its Tiramisù di Aqua Forte, the restaurant’s signature tiramisu from its flagship restaurant in Galle Fort.

    Beyond its regular menu, the founders also see Aqua Pazza as a place where diners can discover more about Italian food and wine culture. The restaurant plans to host wine tastings with its sommelier, Sunday lunches, special dinners and appetitive events, giving regular guests reasons to return and experience something different.

    As Paolo explained, part of the restaurant’s mission is not only to serve Italian food but also to introduce diners to the culture surrounding it, from how Italian wines are enjoyed to the traditions and rituals that accompany the food.

    Ultimately, Aqua Pazza is built around a simple promise: to offer Colombo a taste of Italy as the founders themselves know it. With its carefully sourced ingredients, traditional recipes, contemporary setting and evolving programme of events, the restaurant hopes to make authentic Italian dining feel both refined and approachable.
