Jayden’s Journey Through a Menu of Cocktails

    At Kane Ella, a cocktail is never simply a drink. Behind every glass is an idea, a memory, a lesson or a story. For Head Bartender Jayden, that philosophy has become the foundation of a cocktail menu inspired by his own journey behind the bar. Rather than following a conventional theme or presenting a carefully structured progression, Jayden’s menu brings together different moments from his career, translating experiences, challenges, friendships and discoveries into cocktails. At its heart is a simple ambition: to make bartenders visible. “I wanted to make bartenders visible to the world and get younger generations inspired by how this industry works,” Jayden explains.

    His own journey has not followed a straight path. After entering hotel school, Jayden eventually left before finding his way into bartending. What followed was a process of learning, making mistakes, overcoming setbacks and gradually discovering a passion for the craft. That sense of growth is captured in one of the menu’s most distinctive cocktails, Life of a Banana. The cocktail takes inspiration from three stages of a banana: unripe, ripe and overripe. Each stage represents a different point in a bartender’s career.

    The unripe banana represents the beginning, the barback learning the fundamentals and finding their place behind the bar. The ripe banana represents the bartender who has developed through experience, persistence and passion. The overripe banana represents the Head Bartender or mixologist, someone who has accumulated knowledge and experience and, importantly, has reached a point where that knowledge can be passed on to others. For Jayden, however, becoming “overripe” does not mean reaching the end of the journey. It means giving back.

    As bartenders grow, they have an opportunity to guide those coming behind them, share what they have learned and help others avoid the mistakes they once made. In that sense, Life of a Banana becomes a reflection of the way a career behind the bar evolves. But a bartender’s journey is about more than technique and professional growth. It is also about the people, places and moments that make the industry memorable.

    Acid Trip is one of Jayden’s personal favourites and is rooted in some of his happiest memories behind the bar. Inspired by rum, his favourite spirit, and a cocktail he experienced at Jungle Kade called Ambarella Machan, the drink represents the atmosphere surrounding those experiences as much as the drink itself. The fun, the reactions, the laughter, the smiles and the people all became part of the memory. Those moments eventually found their way into the cocktail. It is a reminder that bartending is not only about competitions, techniques or the pursuit of the perfect drink. It is also about the nights that stay with you, the people you meet along the way and the moments that remind you why you chose the industry in the first place.

    Then there is Whiskey Soda, a cocktail whose simplicity is entirely intentional. Early in his career, Jayden believed that a great cocktail had to be complicated. More ingredients, more techniques and elaborate presentations seemed to represent greater skill. With experience, however, his perspective changed. He began to understand that complexity does not necessarily create meaning.

    Sometimes, simplicity is enough. Whiskey Soda represents the uncomplicated things in bartending and in life: simple moments, genuine experiences and the small details that can easily be overlooked but often become the memories we value most. Together, the cocktails form something larger than a collection of recipes. They tell stories about learning, failure, friendship, happiness, discovery and finding confidence.

    Jayden deliberately avoids presenting the menu as a straightforward timeline of his career. Instead, each cocktail represents a different part of the journey, allowing guests to discover the stories in their own way. Although Jayden’s experiences provide the foundation, the intention is for the menu to represent something bigger than one bartender.

    Behind every bartender is a journey. Everyone starts somewhere. Everyone makes mistakes. Everyone has someone who teaches them, encourages them or gives them a reason not to give up. For Jayden, those people have been an important part of his own development. Their influence taught him the value of thinking differently, experimenting and supporting the people around him. “Bartenders are always together,” he says. That sense of togetherness is ultimately what the menu at Kane Ella celebrates. It is a collection of stories translated into cocktails, reflecting where bartenders begin, how they grow, the people who shape them and the memories they carry with them. Because behind every cocktail is a person. And behind every bartender is a journey.

    The menu also reflects where Jayden sees himself within that journey. He describes himself as still being in the early stages, with plenty more to learn. That openness to learning is part of what makes the menu personal; it does not present his journey as something finished, but as something that continues to develop. Each drink therefore holds a different piece of that experience. Some come from moments of happiness and fun, while others reflect lessons that changed the way he thinks about bartending. Together, they show that the journey is not defined by one particular experience, but by all the moments that come together over time.

    For Jayden, the menu is ultimately a way of putting those moments into something people can experience. Rather than simply explaining what bartenders do, he uses the cocktails to show pieces of what the journey can mean to the person behind the bar. And while the stories begin with his own experiences, the idea extends to the bartenders around him, those who are still learning, those who have grown through the years, and those who are now in a position to share what they know. In that way, the menu becomes Jayden’s journey, but also a reflection of the journeys that happen behind bars every day.
